Are there any pros or cons (other than when you need 1 input to 8 outputs) of using one or the other?

Maybe slightly clearer cabling from the Multiple module.

There are no real pros or cons. Sometimes the Multiple modules make it easier to organize your cables, e.g. if you're sending Keyboard CV to lots of places, you can send CV to a Multiple module and route it from there. If you decide you want to add a Glide module, it's much easier to plug the keyboard CV into the Glide Input and the Glide Output into the Multiple module, for example. They're also very useful if you need to send a signal to more than 6 destinations, as every output in the Multiple has its own 6-way mult built in.

The only downside of a Multiple module, really, is that it's another module filling your cabinet.

This is all part of the fun of modular synthesis. There are often dozens of ways to accomplish any sort of task, can you can build your patch any way you want.
